1. Introduction

In Japan, many dishes are unique to each region. These dishes familiar to the locals are called variously “local gourmet,” “B-class gourmet,” “soul food,” etc., and are very popular. They are many dishes that have been developed in recent years and include a variety of genres such as Western and Chinese cuisine.
 
On the other hand, “local cuisine” has a history of more than 100 years and is mainly Japanese cuisine that makes use of local ingredients and food culture. Many of these dishes have survived because they are supported by the local people, and basically, all of them are of a certain standard of taste.
 
However, it is impossible for foreign travelers with a limited number of travel days to eat all of the unique regional cuisines.
 
Therefore, we have compiled more than 1,000 types of “local gourmet,” “B-class gourmet,” “soul food,” and “local cuisine” and ranked them by region in order of the number of hashtags on social networking services (SNS).
 
We hope that this ranking will make it easier for foreign travelers to try dishes unique to a region.

Comment : Soup-like curry dish, popularised and boomed in Sapporo since the 2000s.

Classification : Meat dishes

Comment : A typical Hokkaido mutton dish. The pot has a unique shape with a convex center. It has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.

3. Obihiro pork bowl

Prefectures : Hokkaido

Classification : Rice bowls and rice dishes

Comment : The city of Obihiro, where pig farming was flourishing, was the birthplace of the pork bowl. In the beginning, pork was used with a sauce similar to that used for broiled eel.

Comment : Miso ramen is the mainstay, but salt soup and soy soup ramen are also popular. The noodles are made from ‘multihydrous noodles’.

Comment : Katsudon (pork cutlet bowl) is eaten mainly in Aizu-Wakamatsu City. Shredded cabbage is laid on top of rice and a pork cutlet soaked in the sauce is placed on top.

Comment : Fried chicken is called ‘Zangi’ in Hokkaido. The chicken is marinated in a soy-sauce-based sweet and spicy sauce, which is characterized by its strong seasoning.

Classification : Hot pots and soups

Comment : A hot-pot dish containing ‘Tampo mochi’ (rice cakes), which are made by wrapping rice around a stick and baking it. It has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.

Comment : As the name suggests, both the soup and noodles are cold, and sometimes ice is floated on top. Soy sauce-flavored is the most popular.

Prefectures : Hokkaido

Classification : Burgers and breads

Comment : Lucky Piero is a chain of hamburger shops operating in the southern Hokkaido area, centered on Hakodate. It has no operations outside of Donan (South part of Hokkaido).

Classification : Ramen

Comment : A version of cold noodles, a traditional dish from the Korean peninsula. Selected by the Ministry of Agriculture, Forestry, and Fisheries as one of the “Local dishes loved by the nation“.

11. Inaniwa udon

Prefectures : Akita Prefecture

Classification : Udon noodles

Comment : Udon noodles are made using the hand-pulling method. It is one of Japan’s three major types of udon and has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.

12. Shirakawa ramen

Prefectures : Fukushima Prefecture

Classification : Ramen

Comment : Ramen noodles are characterized by a soy sauce-based soup made from pork bones and chicken bones and curly noodles.

Comment : Pot dish with taro, konnyaku, spring onions, and beef. It has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.

Comment : This bento originated from Hasegawa Store, a convenience store chain in Hakodate. It is called ‘Yakitori (roasted chicken) bento’ but uses pork skewers.

Comment : In Hakodate, squid guts are dissolved in soy sauce and eaten with squid skewers.

17. Tama konnyaku (konnyaku ball) 

Prefectures : Yamagata Prefecture

Classification : Hot pots and soups

Comment : Spherical konnyaku (konjac) skewered and boiled in soy sauce. Often eaten with a mustard paste.

Classification : Soba noodles

Comment : One of the three major types of soba in Japan. The waiter puts the soba into bowls and continues to fill the bowls one after another as the customers finish eating. It has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.

Comment : A dish of rice cooked in the body of a squid with the entrails removed and rice inside. It is also famous as an ekiben.

Comment : The name of the dish derives from the phrase a dish so tasty that it makes your body shake. The basic form of the dish is thin slices of grilled pork on a bed of lettuce, topped with slices of onion.

Comment : Edamame (green soybeans) from the Shonai region of Yamagata Prefecture. “Dadacha” is a dialect word for “father”.

Comment : Gyoza is circular dumplings laid out in a frying pan and baked. Characterized by a gentle taste with more vegetables.

Comment : Soba served on a long wood board. The soba is characterized by being thicker and blacker than usual.

Comment : A dashi broth with soy sauce-based starchy sauce is poured over freshly boiled udon noodles. A dish for surviving the harsh winter.

Comment : Characterized by a fried egg on top of the noodles. One of Japan’s three major yakisoba dishes and selected as one of the Ministry of Agriculture, Forestry and Fisheries’ “Local dishes loved by the nation”.

Comment : A dish of spaghetti with meat sauce and pork cutlets on a hot griddle plate. A local dish of Kushiro.

Comment : A dish in which beef tongue is stewed until tender and then added to a spicy curry.

Comment : A pot dish of grouper in a broth of fish sauce and salted fish soup (shottsuru). Shottsuru nabe has been selected by the Ministry of Agriculture, Forestry, and Fisheries as one of “Our Regional Cuisines“.

Comment : Hachinohe senbei soup is a soy-sauce-flavored nabe dish with special Nanbu senbei rice crackers. It has been selected as one of the 100 best local dishes by the Ministry of Agriculture, Forestry, and Fisheries.
