About Katsuno Tofu
Founded in 1942, Katsuno Tofu is the only remaining tofu shop in Kagurazaka, Shinjuku ward. This shop’s tofu was famously loved by Prime Minister Kakuei Tanaka (1918-1993), and it continues to supply tofu and fried tofu to nearby high-end Japanese restaurants and eateries. First-time tasters are often surprised by the rich flavor and deliciousness of Katsuno Tofu’s products.
While maintaining its tradition of producing high-quality tofu, Katsuno Tofu also innovates to meet modern tastes, developing products like “TOFU sweets.” Many tourists delight in strolling through Kagurazaka with donuts and muffins made from soybean powder, soy milk, and okara (soy pulp).
What to Expect in the Tofu Workshop
Making Tofu from Soybeans:
In this workshop, you’ll make tofu from soybeans using only three ingredients: soybeans, nigari (coagulant), and hot water. The process is simple yet fascinating, giving you a deep appreciation for this staple of Japanese cuisine.
