Couches de bonheur: The Layers of Happiness

“Couches de bonheur,” which means “Layers of Happiness” in French, perfectly describes the experience we offer. Sayumi Ono, dressed in a traditional kimono, creates these beautiful parfaits right before your eyes. Each layer, made from region-specific fruits, offers a surprising depth of flavor from the first bite to the last.

In addition to your parfait, you will also enjoy three carefully selected teas by Ryosuke Takano. These teas, chosen from various regions across Japan, complement the parfait perfectly and offer a unique tasting experience. The tea’s backstories and the peaceful moments they provide enhance the overall experience.

Our interpreter guides will assist foreign tourists, ensuring that they can participate easily. With a limit of 12 participants, this experience is perfect for families and offers a unique, intimate setting.

The Unique Features of “Couches de bonheur” Parfaits

At “Couches de bonheur,” our parfait is more than just a sweet treat; it’s an intricate culinary experience. Each parfait incorporates not only sweetness but also salty, sour, and savory elements, along with a variety of textures, making it as delightful as a full-course meal.
Our fruits are carefully selected from specific regions, and each layer is crafted to provide surprising changes and deep flavors. This meticulous attention to detail ensures that every bite of our parfait offers a perfect harmony of sweetness, embodying the true meaning of “parfait,” which translates to “perfect” in French.
The parfaits feature seasonal fruits, allowing you to enjoy a different taste each month as they are offered with a new fruit every month.

Introduction of Patissier

Sayumi Ono, our talented patissier, has been passionate about creating desserts since she was five years old. She chose a school that allowed her to obtain both a cooking license and a high school diploma to pursue her dream. After gaining extensive experience at the luxurious XIV Hakone Rikyu, where she handled course desserts and lounge cakes for eight years, Sayumi decided to present her desserts directly to customers. This allows her to witness their smiles up close and showcase her skills fully.

Wearing a traditional kimono, Sayumi Ono prepares the parfait right in front of you, allowing you to ask various questions about the origins of the fruits used and more. This interaction with the artisan provides a valuable opportunity for foreign travelers interested in Japanese sweets.

Introduction of Tea Sommelier

We are proud to collaborate with Ryosuke Takano, an up-and-coming tea sommelier whose tea pairings are highly sought after by Michelin-starred restaurants. Ryosuke selects teas from around the world and curates three exquisite teas from Japan, perfectly complementing our parfaits. His selections not only enhance the flavors of our desserts but also allow guests to appreciate the stories and nuances behind each tea leaf, providing a sense of tranquility.

Tea tasting includes a selection of three carefully chosen teas that complement the parfait, such as oolong tea, Hojicha (roasted green tea), green tea, and black tea.

For example, in July, we offer organic oolong tea “Amaka Roasted Oolong Tea” from Takachiho, Miyazaki Prefecture; organic Hojicha “Hanakaori Hojicha” from Miyazaki Prefecture; and black tea “Benifuki” from Makinohara, Shizuoka Prefecture. These three teas were selected by Ryosuke to perfectly complement the July parfait featuring peaches.
